Mark Perkins, the executive pastry chef at Rosewood, London showed us how he creates some of his incredible realistic cakes. Mark creates custom cakes for many of the hotel's guests.

His pool ball cake consists of a salted caramel mousse and chocolate sponge. These layers are filled with caramel and dipped in chocolate. This is then covered in another layer of mousse before being glazed.

The glaze is perfectly mirrored so the cake looks like an 8-ball. Finally an edible '8' is placed on top.

The pork pie cake is made of almond sponge, with a raspberry jelly topping. This sponge is covered in apricot glaze and wrapped in icing. The cake is airbrushed to match the colour of a pork pie.
