Gaggan is Asia’s Business Insider met with the 27-year-old Indian Express journalist-turned-Le Cordon Bleu chef Garima Arora who’s going to be heading Gaggan’s Mumbai outlet and is “beyond excited” for the job and being back in her city.
In between giving excited youngsters advice on what course to study to become a chef and listening to their queries,
What’s your favorite dish?
That’s very difficult. It changes. These days it’s Thai.

We have to stop aping the top restaurants in the world. We’ve got to stop doing things like everybody else does. We’ve got to figure out a way that works best for us.
It’s all about going back to our roots, and understanding where we come from. That where the answer lies.
