Fettuccine

​Fettuccine is a long, flat pasta that's similar to tagliatelle but slightly wider. You can make fettuccine by rolling out pasta dough into thin sheets and then cutting it into ribbons using a pasta cutter or a sharp knife. It's perfect for pairing with creamy sauces or hearty ragùs.

Ravioli

Ravioli are filled pasta pockets that can be stuffed with a variety of delicious fillings, such as ricotta cheese and spinach, mushroom and cheese, or butternut squash. To make ravioli at home, roll out pasta dough into thin sheets, spoon small mounds of filling onto one sheet, cover with another sheet, and then cut into individual ravioli using a ravioli cutter or a knife.

Gnocchi

Gnocchi is a small dumplings made from potatoes, flour, and sometimes eggs. They're soft, pillowy, and incredibly comforting. To make gnocchi, boil potatoes until tender, mash them, mix with flour and egg, roll the dough into ropes, cut into bite-sized pieces, and then shape with a fork or gnocchi board.

Orecchiette

Orecchiette, which means "little ears" in Italian, is a small, round pasta with a concave shape. You can easily make orecchiette at home by rolling small pieces of pasta dough into balls and then pressing your thumb into the centre to create a small indentation. It's traditionally served with broccoli rabe and sausage or other hearty sauces.

Farfalle (Bowtie Pasta)

Farfalle is a butterfly or bowtie-shaped pasta that's fun to make and versatile to use. To make farfalle at home, roll out pasta dough into a thin sheet, cut it into rectangles, and then pinch the centres to create the characteristic bowtie shape. Farfalle pairs well with light sauces, such as pesto or creamy tomato sauce.
