The mini ovens use convection technology to speedily circulate hot air and cook foods to crispy perfection without the need to submerge items in oil.

Janet Dockery, co-author of Plant-Based Air Fryer Cookbook and one-half of the Vegan As Fork YouTube channel, says, "It's healthier because you don't use as much oil or any - if you choose not to - you can really get away with not using any oil, and you get fantastic results."

Janet's co-author, YouTubing partner, and daughter, Maddie Dockery, also adds that cooking Brussels sprouts in an air fryer will give you similar results to roasting them in an oven but with a much shorter cook time.

  1. Prep your Brussels sprouts. Soak the sprouts in a bowl of salted water for 10 minutes to remove any hiding insects. They're harmless, but you probably don't want to eat them. Dry them thoroughly. Excess water can prevent crisping.
  2. Cut them up. The Dockerys recommend chopping up Brussels sprouts into equal sections to achieve a crispy, caramelized result. Putting them in whole is likely to steam sprouts, making them soggy. Whole sprouts are also more likely to burn on the outside before they're tender in the center.
  3. Toss in oil to coat. You can get away with using no added fat, but tossing them in a bit of oil produces a crispier texture.
  4. Season liberally. Plain salt and pepper are enough to let Brussels sprouts sing, but if you're looking for a punch of flavor, consider sprinkling them with garlic and onion powder. For sprouts with a kick, sprinkle with chili flakes and smoked paprika.
  5. Cook for about 10 minutes. Select 400 degrees Fahrenheit and let the cooker do its thing. Cooking times may vary depending on your air fryer model. Still, around 10 minutes is a good ballpark, says Maddie.
  6. Check on your sprouts. Sprouts in an air fryer get a tasty char when properly cooked, but leave them too long, and they'll become bitter, explains Janet. Take a peek while they cook to check for burning. Edges that are starting to brown are a good indication that the sprouts are ready. You should be able to pierce them with a fork, but they shouldn't get overly mushy. If they're not ready after 10 minutes, keep cooking in one-minute increments.
  7. Serve. Eat those sprouts right away because they taste best when they're hot.

Quick tip: No fresh sprouts on hand? Go with frozen ones. "Frozen vegetables actually usually come out better," says Maddie. The higher water content makes a difference. Opt for pre-cut ones and cook them the same way you would if they were fresh. Add about three minutes to the cook time to ensure the excess moisture evaporates.

Tossing them in honey and vinegar delivers a sweet and sour flavor profile. Maddie and Janet's favorite way to prep sprouts is to toss them in orange juice and maple syrup.   • Know your air fryer. Air fryer cook times vary widely based on the model. You may need to experiment a bit before finding the perfect cook time for sprouts and other vegetables.
