As you <keyword id="6378962" type="UNKNOWN" weightage="60" keywordseo="age">age</keyword>, you might see more wrinkles or your hair turning gray. </p><p>While there's no way to turn back time, <a href="https://balanceone.com/pages/trista-best-rd" target="_blank" rel="noopener">Trista Best, RD, LD</a>, a registered dietitian at Balance One <keyword id="41855" type="PERSON" weightage="60" keywordseo="supplements">Supplements</keyword>, says that some vitamins may slow premature aging.</p><p>Some vitamins have <a href="https://www.fightaging.org/archives/2002/11/what-is-antiaging/" target="_blank" rel="noopener">anti-aging</a> properties - the ability to delay the biology of the aging process.</p><p><a href="https://www.vinehealthcare.com/ff_team/dr-scott-antoine/" target="_blank" rel="noopener">Scott Antoine, DO,</a> physician and owner of The Center for Fully Functional Health®, says that vitamins can help slow the aging process through their ability to overcome toxins that accumulate in the body over time.</p><p>"Oxidation is a process in your body where you build up <a href="https://www.hindawi.com/journals/omcl/2017/8416763/" target="_blank" rel="noopener">reactive oxygen metabolites</a> over many years, and they are damaging to your body. Also, as you age, your immune system becomes less active. Fortunately, vitamins and minerals work with the immune system and have antioxidative properties to lower the risk of age-related disease," Antoine tells Insider.</p><p>Here's a list of vitamins that have anti-aging properties.</p><h2><strong>Anti-aging vitamins </strong></h2><p>While there are many vitamins on the market, Best tells Insider that the most effective ones are those that work to counteract the damage caused by oxidative stress. A majority of vitamins can be obtained through your diet or a supplement.</p><ul><li><strong>Curcumin:</strong> This substance is found in the <a href="https://www.mskcc.org/cancer-care/integrative-medicine/herbs/turmeric" target="_blank" rel="noopener">turmeric plant</a> and has antioxidant and anti-inflammatory properties at the cellular level, which may promote skin health and protect against cancer. Whether administered orally, topically or as a powder, the <a href="https://health.clevelandclinic.org/7-tips-for-taking-turmeric-infographic/" target="_blank" rel="noopener">Cleveland Clinic</a> recommends taking 500 to 1,000 milligrams per day for the general population. Best says risks associated with curcumin range from <a href="https://www.uofmhealth.org/health-library/d06370a1" target="_blank" rel="noopener">headaches and digestive issues</a>,<a href="https://www.uofmhealth.org/health-library/d06370a1" target="_blank" rel="noopener"> as well as interactions with medications that treat heartburn and</a> <a href="https://www.insider.com/gerd-diet" target="_blank" rel="noopener">GERD</a>, to interference with the <a href="https://naturalbloodthinners.org/turmeric-blood-thinner-properties/" target="_blank" rel="noopener">body's ability to stop bleeding</a>.</li><li><strong>CoQ10:</strong> <a href="https://www.mayoclinic.org/drugs-supplements-coenzyme-q10/art-20362602" target="_blank" rel="noopener">Coenzyme 10</a> is an antioxidant that promotes the production of collagen. According to a <a href="https://www.frontiersin.org/articles/10.3389/fphys.2018.00044/full" target="_blank" rel="noopener">2018 review</a>, its anti-aging effect improves how cells transform energy, known as bioenergetics. However, Best says that CoQ10's effectiveness in treating signs of aging is likely skewed by other products used in a skincare routine. "I do support adding it to an already existing skincare routine," she says, "just not making it the foundation of your regimen and not going out of your way to make sure it is present."</li><li><strong>Collagen:</strong> This is a protein in the body that <a href="https://healthmatters.nyp.org/can-collagen-supplements-really-reduce-signs-of-aging/" target="_blank" rel="noopener">improves skin elasticity</a> and reduces fine lines and wrinkles. Best says women may start losing collagen in their twenties,  some as early as 18 years old. "Collagen doesn't exactly result in age reversal, but it can stop additional loss. The best collagen for anti-aging is a combination of the <a href="https://www.insider.com/do-collagen-supplements-work" target="_blank" rel="noopener">three types</a>. Type 1 and Type 3 are the most effective at anti-aging and are ideally taken as a powder," says Best.</li><li><strong>Resveratrol: </strong> This <a href="https://www.research.va.gov/currents/1115-4.cfm" target="_blank" rel="noopener">antioxidant</a> is found in red wine and is popular for its anti-aging effects, which are most effective in supplement form, says Antoine. In addition, Antoine says resveratrol can also protect the body against aging by activating a gene called <a href="https://www.koreascience.or.kr/article/JAKO200810103425940.pdf" target="_blank" rel="noopener">SIRT1</a>. Though not severe, <a href="https://lpi.oregonstate.edu/mic/dietary-factors/phytochemicals/resveratrol#adverse-effects" target="_blank" rel="noopener">gastrointestinal side-effects</a> have been linked to resveratrol. </li><li><strong>Vitamin C:</strong> A <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5707683/#:~:text=The%20role%20of%20vitamin%20C,and%20higher%20susceptibility%20to%20infections." target="_blank" rel="noopener">2017 review</a> reports that vitamin C helps boost the immune system by making more immune cells. In the <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5707683/#:~:text=The%20role%20of%20vitamin%20C,and%20higher%20susceptibility%20to%20infections." target="_blank" rel="noopener">skin</a>, it protects against oxidative stress. With that in mind, another <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5579659/" target="_blank" rel="noopener">2017 review</a> finds consistent evidence that vitamin C is protective against premature aging. Not only is it a powerful antioxidant, but vitamin C can also be used as a <a href="https://www.health.harvard.edu/newsletter_article/topical_drug_treatments_for_age_spots" target="_blank" rel="noopener">lightener to address "liver spots"</a> and darkening around the eyes, which are also signs of aging. <a href="https://ods.od.nih.gov/factsheets/VitaminC-HealthProfessional/" target="_blank" rel="noopener">Vitamin C can be found in food</a> or taken in supplement form. The daily recommended amount for an adult is <a href="https://www.mayoclinic.org/healthy-lifestyle/nutrition-and-healthy-eating/expert-answers/vitamin-c/faq-20058030" target="_blank" rel="noopener">65 to 90 milligrams</a>. However, excessive amounts can cause side-effects, including but not limited to vomiting, heartburn, and diarrhea.</li><li><strong>Vitamin E:</strong> The function of vitamin E, according to Antoine, is that it protects against collagen <a href="https://www.biologyonline.com/dictionary/cross-linking" target="_blank" rel="noopener">crosslinking, </a>and <a href="http://www.vivo.colostate.edu/hbooks/pathphys/topics/vitamine.html" target="_blank" rel="noopener">stops the oxidation of lipids</a> linked to both aging and the skin. Vitamin E is a fat-soluble vitamin -similar to vitamin D and K - that's <a href="https://lpi.oregonstate.edu/mic/health-disease/skin-health/vitamin-E" target="_blank" rel="noopener">useful in treating wrinkles</a>, dark spots, and skin elasticity, says Best. However, she says these vitamins E and other fat-soluble vitamins need to be closely monitored by a doctor, considering they can <a href="https://www.insider.com/vitamin-e-toxicity" target="_blank" rel="noopener">reach toxic levels</a> in the body. </li><li><strong>Selenium:</strong> This is a <a href="https://slowaging.org/selenium-benefits/" target="_blank" rel="noopener">trace mineral</a> that prevents vitamin E deficiency. Antoine says selenium helps by reducing DNA damage. Selenium can be found in food, especially Brazil nuts, or as a supplement with a recommended daily dose of 100-200 mcg. That said, long-term use of selenium supplements may be linked to an increased risk of <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4772044/" target="_blank" rel="noopener">type 2 diabetes</a> and <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6491296/" target="_blank" rel="noopener">cancer</a> - but there is conflicting evidence that suggests selenium may <a href="https://www.nature.com/articles/srep19213" target="_blank" rel="noopener">lower your cancer risk</a>. More research is needed.</li></ul><h2><strong>Insider's takeaway </strong></h2><p>Aging doesn't just produce cosmetic effects. Antioxidants stimulate the immune system and are responsible for reducing inflammation," says Best. But he thinks people who <a href="https://www.businessinsider.com/processed-food-makes-us-fat-leads-to-cancer-alternatives-2019-5">rely too much on convenience foods</a> incur a different expense: </strong></strong>"The cost in terms of health care is going to be enormous down the road," he said.</li><li><a href="https://www.businessinsider.com/?hprecirc-bullet">Visit Business Insider's homepage for more stories.</a></li></ul><p>Low-carb eating is not always cheap. </p><p>"We probably spend about 60 bucks a month on nuts alone," <a href="https://www.ufv.ca/kinesiology/faculty-and-staff/harper-dave.htm">kinesiologist</a> and <a href="https://www.facebook.com/dave.harper.14224">cancer researcher</a> David Harper, who's been on a high-fat <a href="https://www.businessinsider.com/keto-diet-foods-what-cancer-researcher-eats-2019-7">ketogenic diet for six years along with his wife Dale Drewery</a>, recently told Business Insider. </p><p>But Harper believes that buying pricey, keto-diet-friendly staples, such as local grass-fed butter (Harper pays $20 Canadian per pound) and ribeye steaks, will pay off for years to come. </p><p>"You can pay maybe another <a href="https://globalnews.ca/news/3828492/healthy-food-cost-canada/">buck and a half a day</a> to eat healthier food, but if you don't do that, the cost in terms of health care is going to be enormous down the road," he said.</p><p>Harper and Drewery recently published a <a href="https://www.businessinsider.com/keto-diet-foods-what-cancer-researcher-eats-2019-7">how-to keto guide</a> called "BioDiet." In it, the couple describes the food they eat on their high-fat diet, and not all ingredients are expensive. They like chicken, eggs, and pork, for example, which are not as pricey per pound as nuts, butters, and seeds. </p><p>"We eat organ meats and that sort of thing, like liver, and those are just really cheap," Harper said. </p><p>He and his wife gave us a rundown of what's on the shelves in their kitchen, and the list shows that the keto diet, when done well, is not a high-protein, bacon-and-cheese-fueled eating plan.</p><h2>Not all keto diets are created equal</h2><p>Keto diets involve a lot of butter, oil, and other fats: Dieters get more than two thirds (70-80%) of their daily calories from fat, while generally getting no more than 5% from carbs. The goal is to enter a metabolic state called ketosis, in which the body breaks down fat for fuel instead of using carbohydrates. That aligns with guidance that most nutritionists agree with, whether they endorse keto diets or not: Too much sugar is <a href="https://www.businessinsider.com/nutrition-myths-facts-outdated-diet-advice-debunked-2019-6">not good for our bodies, our brains, or our long-term health</a>. </span></p><p><span>"We've been vilifying fat, especially saturated fat, for the last 30 or 40 years, when in fact we should have been vilifying sugar," Harper said.</span><span></span></p><p>The keto diet has been shown to be helpful for treating epileptic seizures, fueling weight loss, and combatting Type-2 diabetes. The regimen has also gained something of a <a href="https://www.businessinsider.com/what-is-keto-diet-beginners-2017-12">cult following in Silicon Valley</a> and among some elite Hollywood <a href="https://www.businessinsider.com/how-to-keto-what-is-ketosis-keto-diet-explained-2018-8">stars like</a> Kim Kardashian and Halle Berry.</p><p>But some keto dieters tend to rely too much on protein-packed foods like red meat and cream, while not getting enough essential nutrients from plants. That could up one's odds of developing <a href="https://www.businessinsider.com/gout-symptoms-treatment-how-common-2019-1" target="_blank" rel="noopener">health problems like gout</a> and put <a href="https://www.businessinsider.com/keto-diet-kidney-stone-gout-risk-how-to-avoid-problems-2018-7" target="_blank" rel="noopener">extra stress on the kidneys</a>.</p><p><span>To avoid those risks, Harper said he and Drewery make sure to eat plenty of veggies and nuts. </span></p><p><span>"We have a little bit of animal protein every day of some sort or another, but not a lot," he said. "Whether you're eating a pepper or a bit of summer squash or zucchini, you're going to get a little bit of carbs. But that amount is negligible in terms of staying in ketosis, so I don't worry about it."</p><p>Some of his favorite keto-friendly veggies include (in alphabetical order): artichokes, asparagus, avocados, bell peppers, bok choy, broccoli, brussels sprouts, cabbage, cauliflower, eggplant, green and yellow beans, kale, lettuces of all kinds, mushrooms, olives, onions, radishes, snow peas, spinach, summer squash, tomatoes, watercress, and zucchini.</p><p><strong>Unsaturated Oils </strong></p><p>These are liquid at room temperature and <a href="https://www.businessinsider.com/healthy-fats-in-food-2018-7">high in monounsaturated fat</a>. Olive oil and macadamia oil are Harper's go-tos. </p><p><strong>Saturated fats</strong></p><p>This category includes ghee, coconut oil, and Harper's preferred $20 grass-fed butter.</p><p><strong>Cream</strong><span>  </span></p><p>"I eat full-fat cream in everything," Harper said. Regular milk isn't a great option for people on the keto diet because almost all of the carbohydrates in milk come from lactose, which is a sugar. There's barely any lactose in cream.</p><p><strong>Eggs</strong></p><p>Harper sometimes cooks a quick breakfast egg "muffin": He mixes cheese, ham, and almond flour or coconut flour in with eggs, then sticks the concoction in the oven in muffin tins. </p><p><strong>A stash of nuts</strong></p><p>Pecans, macadamia nuts, Brazil nuts, hazelnuts, and walnuts are all staples at the Harper-Drewery household, as is almond butter.</p><p><strong>Seeds</strong></p><p>The couple keeps a stock of sesame seeds, pumpkin seeds, and sunflower seeds around. Drewery told Business Insider that she also bakes some keto "breads" using nuts, seeds, and psyllium husks.</p><p><strong>Berries and very small doses of other fruit</strong></p><p>Many fruits aren't keto-friendly because they contain a lot of fructose (fruit sugar). But berries are fine on the plan, so Harper and Drewery often buy raspberries, blackberries, strawberries, and blueberries. They'll occasionally indulge in a few apple slices, but probably wouldn't eat the whole thing in one sitting. </p><p><strong>Full-fat yogurt</strong></p><p>Harper said he also likes to buy kefir and cheeses like goat, Brie, blue, and cheddar.</p><p><strong>Meat, poultry, and fish</strong></p><p>Harper opts for marbled, fatty cuts of steak, and he eats chicken with the skin on. He said fatty fish like salmon and halibut are also favorites in his house, along with canned tuna, sardines, and shellfish.</p><p><strong>Non-animal protein sources </strong></p><p>This includes tempeh, tofu, and textured vegetable protein (TVP).</p><p>Of course, many of the things on the list above make for <a href="https://www.businessinsider.com/processed-food-makes-us-fat-leads-to-cancer-alternatives-2019-5">healthy, unprocessed additions</a> to any diet, whether it's low-carb or not.</p><p>But since the keto diet is so restrictive, Drewery said that keeping the freezer stocked with berries, eating most meals at home, and enjoying leftovers often makes it easier not to think too much about what she eats each day. </p><p>"The idea that you would be counting your calories or counting your carbs for me is just a complete bore," she said. "Because, you know, I'd rather just eat."</p><h2>Keto isn't for everyone</h2><p>Many doctors and nutritionists caution that <a href="https://www.businessinsider.com/keto-diet-kidney-stone-gout-risk-how-to-avoid-problems-2018-7">keto diets come with risks</a>. Anyone considering going keto should talk to their doctor, since some people have medical conditions, take drugs, or have other circumstances (like a baby in the womb) that could make the diet unsafe for them.</p><p><span>Plus, not all carbs are necessarily bad for our health. Instead, a wealth of studies has shown that people who adhere to Mediterranean diets, which feature fatty oils, fish, and nuts (like keto), but also include lots of fruit and whole grains, tend to live <a href="https://www.businessinsider.com/best-diet-body-brain-healthiest-2017-7">some of the longest, healthiest lives</a>. </span></p><p>What's more, the keto diet may not be much more effective for weight management than other healthy, more well-rounded eating plans. In fact, a <a href="https://jamanetwork.com/journals/jamainternalmedicine/fullarticle/2737919">roundup of studies published earlier this week</a> suggests that keto diets are "<span>associated with less than a kilogram of additional weight loss over high-carbohydrate, low-fat strategies" when they're used long-term.</span></p><p><span>To date, </span>there hasn't been enough rigorous study of healthy people following the keto diet to know whether the high-fat plan is completely safe long-term. </p><p><span>"I think the vast majority of people who go on this diet will have no trouble with their cholesterol," San Francisco <a href="https://www.businessinsider.com/keto-diet-monitoring-breathalyzer-sniffs-out-ketosis-2019-7">cardiologist Ethan Weiss recently told Business Insider</a>. And ironically, the more that system fuels planet-wide warming, the harder it will become to adequately feed ourselves.</span></span></p><p>The report's numbers are stark. </p><p><span>"</span><span>Agriculture, forestry, and other types of land use account for 23% of human greenhouse-gas emissions," Jim Skea, co-chair of one of the IPCC working groups, said in a press release. </span></p><p>The food system overall -  including farming and grazing, transportation, packaging, and feed production - produces 37% of greenhouse-gas emissions, the report found. </p><p>In the fight to keep global temperatures from rising more than 2 degrees Celsius - the goal of the <a href="https://www.businessinsider.com/paris-agreement-explained-2016-11">Paris agreement</a> - governments around the world have thus far primarily focused on revamping the transportation and energy sectors. But changing the way we use land is important as well, the report said, because those shifts offer us a way to suck carbon dioxide back out of the air (unlike reducing the burning of fossil fuels, which would cut emissions but not undo  any of the damage we've already created).</p><p>Changing the way we farm, leaving forests standing, and reducing food waste could reduce emissions, capture carbon, and increase global food security, the report's authors said.</p><h2><strong>Feeding the human race emits a lot of heat-trapping gas</strong></h2><p><span style="font-weight: 400;">On average, the global temperature has already risen about 1 degree Celsius above pre-industrial levels. This year is on track to be the third-hottest on record globally, <a href="https://medialibrary.climatecentral.org/resources/half-year-checkup-global-heat-and-national-rain-2019">according to Climate Central</a>. Last year was the fourth warmest, <a href="https://www.noaa.gov/news/2018-was-4th-hottest-year-on-record-for-globe">behind 2016 (the warmest), 2015, and 2017</a>. It has already risen more than 1.5 degrees Celsius. </p><p>When it comes to agriculture's contribution to this warming, soil management accounts for <a href="https://www.epa.gov/ghgemissions/sources-greenhouse-gas-emissions#agriculture">almost half of US agricultural emissions</a>. Fertilizer enriched with livestock manure and nitrogen releases nitrous oxide and methane, two potent greenhouse gases, into the atmosphere. Such shifts, they said, could provide crops with more fertile, carbon-rich soil and pull more carbon dioxide out of the atmosphere.</span></p><h2>Our food security is under threat</h2><p><span style="font-weight: 400;">As climate change increases the frequency and intensity of extreme weather events like flooding, heat waves, and droughts, this volatility</span><span> threatens global crop production and makes it challenging to feed a growing world population. From 2007 to 2016, the earth absorbed about 29% of total carbon-dioxide emissions - 11.2 gigatons per year.  That happens via natural processes, because plants take in carbon dioxide through photosynthesis and store carbon in the soil when they decay. Trees are especially good at that.</p><p>In general, that absorption happens on land that's not touched by humans. Managed land, on the other hand - the kind that's farmed or logged - emits greenhouse gases, on the whole. So as we convert more forests, wetlands, and other vital ecosystems to farmland, we inhibit the Earth's capacity to absorb greenhouse gases.</p><p>The IPCC report found that human use now directly impacts more than 70% of Earth's ice-free land.</p><p>"This additional gift from nature is limited," Louis Verchot, another one of the IPCC report's co-authors, said in the press conference. "If we continue to degrade ecosystems, if we continue to convert natural ecosystems, if we continue to deforest and we continue to destroy our soils, we're going to lose this natural subsidy that we're getting, that's protecting us, in part, from ourselves."</p><p><div class="KonaFilter image-container display-table"><div><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/5bfd7c140d7c671920007afc-2250/webpnet-resizeimage.jpg" border="0" alt="Amazon deforestation" data-mce-source="Nacho Doce/Reuters" data-mce-caption="An aerial view of a tract of Amazon jungle recently cleared by loggers and farmers near the city of Novo Progresso, Brazil on September 22, 2013." /><p class="source"><span>Nacho Doce/Reuters</span></p><p class="caption">An aerial view of a tract of Amazon jungle recently cleared by loggers and farmers near the city of Novo Progresso, Brazil on September 22, 2013.</p></div><p></p></div></div></p><p><span style="font-weight: 400;">For this reason, the report authors said, it's imperative to protect areas that trap significant amounts of carbon, known as "carbon sinks," like</span> peat lands, forest lands, and coastal wetlands.</p><h2>Changing what we eat could make a big difference</h2><p>To reduce emissions from our food system, the IPCC report called for major changes in the ways we produce food, and what we eat.</p><p><span style="font-weight: 400;">"Diets present major opportunities for reducing greenhouse-gas emissions as well," Rosenzweig said. "Diets that are rich in plant-based food emit lower greenhouse-gas emissions than diets that are very heavy in red meat consumption."</span></p><p><span style="font-weight: 400;">The greenhouse-gas equivalent of up to 8 gigatons (16 trillion pounds) of carbon dioxide could be prevented from entering the atmosphere by 2050 if "almost the whole world became vegan," Rosenzweig added. </span></p><p>Dietary changes that favor more plant-based foods like legumes, fruits, nuts, and seeds confers a double benefit, she said, because they also free up land that's used to grow feed and raise livestock. That land could be used instead to restore soil or forests and absorb more carbon from the atmosphere.</p><p>"We're just beginning ... to explore the potential for diets to contribute to reduction of greenhouse gases," <span style="font-weight: 400;">Rosenzweig said.</span></p>

It is used for clarity and emphasis. Puff puff is deep-fried dough sprinkled with powdered sugar in some cases, and it can be served as both an appetizer and a <keyword id="31573" type="PERSON" weightage="60" keywordseo="dessert">dessert</keyword>, savory or sweet.<br /><br />When I first think of mochi, I think of the mochi ice cream in boxes sold at Trader Joe's, but that's just the American take on the famous dessert. Mochi is actually a rice cake made from mochigome. This rice becomes glutinous when boiled and doughy when steamed. Water and air are huge factors in the transformation of mochigome to the mochi dessert that we know. Water prevents the mochi from being a sticky mess, and air contributes to the gooey stretch.<br /><br />The word tembleque is associated with the Spanish word temblar, which means to jiggle or tremble. This definitely represents the consistency of this dessert. A coconut pudding, or custard if you wish, templeque is a holiday dessert that has numerous variations throughout Latin America. But no matter where you are, it is best eaten cold.<br /><br />Legend has it that chimney cakes were invented by women in Transylvania during the Mongol invasion in 1241. In order to convince the Mongols that they would outlive them during a stalemate, the women of Transylvania came up with a plan that mixed flour with water wrapped around a wooden stick. This gave the illusion of large portions of bread, but they were in fact hollow on the inside. Starving and disappointed, the Mongols left, and chimney cakes went on to be popular in both Romania and Hungary.<br /><br />This next dessert takes us here to Little Cupcake Bakeshop in New York, home to one of my favorite American desserts. And, no, it is not apple pie. Many people wonder, is red velvet cake simply just chocolate cake with red <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">food</keyword> dye? And the answer is: not exactly. Though the dessert has cocoa powder as one of the ingredients, it also calls for vinegar and buttermilk. The acidic flavors mixed with the cream-cheese frosting makes for a dessert that is definitely not chocolate cake. The red velvet cake stems back to a marketing ploy by an American food-coloring company. During the Great Depression, in order to boost sales, the Adams Extract company added red food coloring to velvet cake in order to give it the bright, distinct color that we know today. So as demand for the dessert increased, so did their revenue.<br /><br />Banoffee pie is a sweet combination of bananas, toffee, and whipped cream on a thick graham-cracker crust. The word banoffee itself is actually a portmanteau from words banana and toffee. It was invented at a restaurant in Sussex, England, and became world-famous.<br /><br />Yakgwa, meaning "medicinal confection," got its name because honey was known in Korea as healthy medicine. Yakgwa is a deep-fried cookie soaked in honey for six to eight hours. The history of this dessert is tied to special occasions like royal banquets or Chuseok. Though originally enjoyed mostly by the upper class because of the honey, it is commonly eaten today and still served for Chuseok.<br /><br />Soaked in a series of three milks, evaporated, condensed, and heavy cream or whole milk, this dessert is incredibly simple yet deliciously complex. Although people are not entirely sure where the dessert originated, the main consensus is Mexico. It was Nestlé that took the tres leches cake mainstream by featuring the recipe on cans of evaporated, condensed, and cream milk. Despite the marketing scheme, tres leches developed its own cultural significance in families all across Latin America.<br /><br />Stroopwafel is a sweet, caramellike filling sandwiched between two thin waffle cookies and was invented in the Dutch city of Gouda. Gerard Kamphuisen, who is credited as the inventor, took leftover bread crumbs and mixed them with a thick syrup. Warm up the caramel by letting the stroopwafel sit on a cup of coffee or tea before consuming, and you won't be sorry.<br /><br />A Filipino word meaning "mix-mix," halo-halo is a popular dessert in the Philippines made up of shaved ice, condensed milk, and fun sweet toppings like fruit, jellies, beans, ube ice cream, or sweet custard. This sweet treat is derived from the Japanese dessert kakigori. With the mix of Japanese occupation before World War II and the ice plant built by Americans in the Philippines in 1902, it was only a matter of time before Filipinos redesigned the ice treat to make what is known today as halo-halo.<br /><br />The origins of this dessert are a bit murky, with the Catalans saying their crema Catalana preceded France's crème brûlée as well as Britain saying its trinity cream was the first. However, thanks to chef François Massialot, France has the oldest recipe in writing, dating back to 1691. Crème brûlée is a custard topped with sugar that gets torched to create a caramelized, hardened top layer.<br /><br />Unlike crème brûlée, where the curdling, or clumping, of eggs in the custard is the sign of a mishap, baked custard welcomes the slight cooking of the egg. Instead of including only the egg yolk, like most custards, baked custard includes the entire egg and can be served warm or cool, based on preference. Did you know that the correct way to eat a Belgian waffle is with your hands?<br /><br />The Belgian waffle, originally called Brussels waffle, is one of two types of waffles that originated in Belgium. Americans know the Belgian waffle as a delicious breakfast food, but not many of us are actually eating the waffle as it was intended. Belgian waffles are not to be eaten with a knife and fork, but rather with your hands. And no syrup. Maybe fruit or whipped cream at most. Maurice Vermersch was the one who changed the name from Brussels waffle to Belgian, because Americans did not know where Brussels was.<br /><br />Partly influenced by British colonial occupation, this dessert actually has health benefits. Currants are high in fiber; manganese, which helps strengthen bones; potassium; and copper, which helps with metabolism. Trinidadians eat the rolls casually as an afternoon snack or sometimes breakfast. This dessert actually is not pudding at all. Malva pudding, like many other desserts, has an unknown origin story. Some say Dutch, while others say South African. Similar to toffee pudding, its warm, spongy texture coated in a warm cream sauce is a recipe for deliciousness. And how can I forget the key ingredient? The apricot jam.<br /><br />The cake's name is derived from the liquor of the Black Forest mountain region, known as Schwarzwälder Kirschwasser. The liquor is distilled from tart cherries. Black Forest cake was invented in 1915 by confectioner Josef Keller. Some people suggest that the look of the cake is a visual pun on the traditional bollenhut worn by the women in the Black Forest.<br /><br />As popular as this dessert is in India, according to food historian and former chef Michael Krondl, it's derived from a fritter belonging to Central Asian Turkic invaders. Folklore in India says that gulab jamun was accidentally created by a Persian priest and presented to the people as a royal dessert. Although it shares similarities with the Arabic luqaimat, a staple during Ramadan, gulab jamun is unique because it's covered in a rose-water-scented syrup.<br /><br />As someone who took out loans to pay for college, the story of this next dessert really hit home. If you're searching for an easy, no-bake dessert option, look no further. The Nanaimo bar consists of three layers. The base is made up of wafer, nuts, and coconut crumbs, the middle is custard, and the top layer is chocolate ganache. The bar is named after the city of Nanaimo in southwest Canada. The earliest recording of the name "Nanaimo bar" was in 1953. Susan Mendelson popularized the dessert and commercialized it in the 1970s to help pay her tuition. She then opened up her own café, The Lazy Gourmet, selling the dessert.<br /><br />Khao niaow ma muang is most likely to have originated in northern Thailand. This traditional Thai dessert is made with glutinous rice, coconut milk, a pinch of salt, sugar, and mangoes garnished with toasted sesame seeds or split mung beans. The best time to eat this dessert is in the peak mango season in Thailand, April through June.<br /><br />Translated from Italian as "pick me up," this espresso- and alcohol-infused dessert is sure to do a bit of that and more. Pastry chef Loli Linguanotto was identified as the creator in the '70s. However, Italian food writers discovered evidence that the same ingredients were first combined and called "tirime su" by chef Mario Cosolo in the '50s. This, of course, sparked much controversy, but regardless, the origin remains in Italy.<br /><br />Baklava's origins are still debatable. Both Turkey and Greece claim ownership of the dessert. In Turkey, baklava is traditionally made with pistachios, walnuts, almonds, or hazelnuts, and in 2008, the Turkish patent office registered a certificate for Antep baklava, or baklava with pistachios. Skyr comes in many different flavors and has health benefits that may make you want to ditch your yogurt.<br /><br />Sopa borracha, which translates to drunk soup, will not get you drunk, nor is it a soup. It is a delicious sponge cake drenched in a liquid mixture of boiled raisins and prunes with cinnamon, sugar, rum, sherry, and lemon zest. But the controversy over whether jam should be included may not get settled anytime soon.<br /><br />Syrniki, or fried quark pancakes, date back to Russian texts from the 10th century. Quark is a dairy product that is created by warming soured milk until it curdles. It is dried and crushed, rolled in flour, and then fried to create a crispy exterior and soft interior. Top it with sour cream and fruit, and you may just have yourself a syrniki.<br /><br />Picarones are a mix of sweet potatoes and squash, flour, and salt shaped and fried with syrup on top. Enslaved African cooks who were brought to Peru by the Spaniards created this delicious treat inspired by the Spanish buñuelos.<br /><br />Though the spelling, pronunciation, and exact recipe of this dessert changes throughout the region, kanafeh is traditionally a favorite amongst people in the Middle East. Think shredded phyllo dough or semolina dough with melted cheese, cream, or nuts topped with sweet rose-water syrup.<br /><br />This stacked dessert features eight thin layers of dough with dulce de leche sandwiched between, topped with whipped Italian meringue. But we are most likely in the middle of another devastating (though perhaps less obvious) extinction event today. The trend is hitting global fauna on multiple fronts, as <a href="https://www.businessinsider.com/oceans-warming-faster-than-we-thought-2019-1">hotter oceans</a>, habitat loss, and <a href="https://www.businessinsider.com/oceans-warming-faster-than-we-thought-2019-1">climate change</a> drive animal populations down on an unprecedented scale.</p><p data-reactid="45">Today, the United Nations released <a href="https://www.ipbes.net/">a summary of a report</a> from its <span>Intergovernmental Science-Policy Platform on Biodiversity and Ecosystem Services (IPBES), which assessed the state of our planet's biodiversity. </span><span>The UN's findings are grim.</span></p><p data-reactid="45"><span>Between 500,000 and 1 million plant and animals species face extinction, many within decades, the report said. It estimated that</span><span> 40% of amphibian species, more than 33% of all marine mammals and reef-forming corals, and at least 10% of insect species are threatened. The work evaluates how many species are threatened by extinction and why, and how many species have already been lost. More than 130 nations, including the US, approved the report summary. The full text is expected to be published later this year.</span></p><p>"This is arguably a long overdue report that brings together signs from every country in the world," Hugh Possingham, chief scientist<span> of The Nature Conservancy, told Business Insider. "Observing these declines in species abundance is sort of like reading obituaries."</span></p><h2><span>Humans are drastically changing in the world (and not for the better) </span></h2><p><span>The report is adamant that human activity is the reason so many species are facing extinction. In particular, the findings highlight a few primary drivers of these declines in animal populations: changes in how people farm and fish, the invasion of alien species, and pollution. </span></p><p><span>According to the f</span><span>indings, 75% of all land on Earth and 66% of oceans have been significantly altered by people. Land degradation, meanwhile, has reduced the productivity of 23% of the planet's usable land space. Meanwhile, plastic pollution has increased tenfold since 1980, and up to 400 million tons of heavy metals, toxic sludge, and industrial waste get dumped into oceans and rivers each year. </span></p><p><span>On top of all this, human activity spreads many invasive species, like zebra mussels. People can carry alien species with them between continents, countries, or regions when they travel. Shipments of goods and cargo can also contribute to a species' spread.</span></p><h2><span style="color: #000000;">Why having fewer species on Earth is bad <keyword id="6355005" type="UNKNOWN" weightage="60" keywordseo="news">news</keyword> for humans</span></h2><p><span>For Possingham, the report highlights the ways in which declining biodiversity and the human experience are interconnected. </span></p><p><span>"I think people have just forgotten how many things they get from nature," he said, adding that </span>accelerating extinctions will "fundamentally affect the global economy and the health of every human being." </p><p><span>The impacts for humanity could be especially detrimental when it comes to the security of our our global food and water supplies. </span>Insects like bees, hoverflies, and other pollinators perform a crucial role in fruit, vegetable, and nut production. Plus, bugs are food sources for many bird, fish, and mammal species - some of which humans rely on for food.</p><p>But according to the report, about 10% of the world's insect species are in decline. It calculated that the projected declines in the numbers of <span>of wild bees and other pollinators puts at risk up to $577 billion in annual crop production. </span>Similarly, <a href="https://www.sciencedirect.com/science/article/abs/pii/S0006320718313636">a study published earlier this year</a> found that the total mass of all insects on the planet is decreasing by 2.5% per year. If that trend continues unabated, the Earth <a href="https://www.businessinsider.com/insects-dying-off-sign-of-6th-mass-extinction-2019-2">may not have any insects at all by 2119</a>. </p><div title="Page 3"><p data-elm-loc="9"><span>In addition to insect declines, the UN report also found that domesticated plants and animals are disappearing: By 2016, almost 10% of domesticated breeds used for food and agriculture had gone extinct, and at least 1,000 more are threatened today. The report's authors noted that the human population has doubled in the last 50 years. In order to feed that growing number of people (and supply them with other goods and resources), more and more land is needed, which exacerbates habitat loss.</span></p><p data-elm-loc="9"><span>Currently, the world's population hovers around <a href="http://www.worldometers.info/world-population/">7.7 billion</a>, but the <a href="https://www.un.org/development/desa/en/news/population/world-population-prospects-2017.html">UN expects</a> that number to grow to 9.8 billion in 30 years and reach 11.2 billion by 2100. They suggest that the extinction trend could be reversed or halted with global action and cooperation.</p><p>They suggest, for example, that governments strengthen and enforce environmental laws that eliminate illegal logging and fishing, reduce pollution, and help farmers grow more food on less land.</p><p>"We have 10 to 15 years in which we can reverse this," Possingham said. "We don't have to stop people from eating, or using electricity, or breeding - we just have to be cleverer about how we use the land we live on."</p><p>Halting habitat destruction is the only solution to the extinction problem, he said. And humans could do that by changing the way we allocate land to different uses, like farming, urban development, and energy production.</p><p>"The most finite resource on our planet is surface area," he said. (Like, <a href="https://markets.businessinsider.com/news/stocks/stocks-market-news-drop-after-fed-predicts-bleak-future-jobs-2020-6-1029299798">years</a>).</li><li><strong>The Wing CEO Audrey Gelman stepped down.</strong> The cofounder of the women's social club, which provides networking and coworking spaces, announced her resignation after former employees criticized the companies culture as toxic for workers of colors and current employees <a href="https://twitter.com/AlexNoelleCov/status/1271096740301672459">staged a digital walkout</a>.</li><li><strong>VP Pence </strong><a href="https://www.businessinsider.com/pence-deletes-tweet-trump-campaign-staffers-violating-social-distancing-order-2020-6"><strong>deleted a tweet</strong></a> showing himself speaking to campaign staff crammed together in a confined room with no distancing or masks. What is it with GOP <keyword id="1754604" type="PERSON" weightage="60" keywordseo="coronavirus">coronavirus</keyword> denial? Scroll down and weigh in on our "Question of the day."</li><li><strong>The government <a href="https://www.businessinsider.com/government-stored-rifles-pistols-washington-dc-george-floyd-protests-2020-6">reportedly stashed </a></strong>"tens of thousands of rifle and pistol rounds" to be used against protests "in case of emergency." <a href="https://www.nytimes.com/2020/06/10/us/politics/national-guard-protests.html">The New York Times</a> reported that the aggressive reponse to the protests by the <keyword id="367961" type="ORGANIZATION" weightage="60" keywordseo="national-guard">National Guard</keyword>, pushed by Trump's heavy hand, has prompted a review of the "debacle."</li></ul><h2><strong>BLODGET &amp; PLOTZ</strong></h2><p><strong></strong></p><p><strong>The pandemic isn't over — and in some states it's now getting worse.</strong>  Everyone is sick of the coronavirus and wants it to be over, but... confirmed infections are now growing again in many states, even adjusting for increased testing, and about 750 Americans are still dying of COVID every day. </p><p>The early hotspots of New York, New Jersey, and Massachusetts are under control, at least temporarily. But as the excellent and free<a href="https://www.nytimes.com/interactive/2020/us/coronavirus-us-cases.html"> coronavirus data pages from the New York Times </a>show, confirmed cases are now increasing again in 21 US states, including some big ones: California, Texas, and Florida. A <a href="https://www.businessinsider.com/coronavirus-us-worst-fighting-outbreak-leaked-cdc-document-yahoo-2020-6">leaked CDC document</a> suggests the US is doing the worst job fighting <keyword id="8763838" type="UNKNOWN" weightage="60" keywordseo="covid-19">COVID-19</keyword> of 10 countries with current outbreaks — including Brazil, Russia, and Iran. </p><p>Optimists dismiss this concern, suggesting that, among other things, new infections represent a small percentage of the population and are often geographically isolated.</p><p>The trouble with this logic is that when people aren't taking precautions, infections spread. As one epidemiologist memorably put it, <strong>you can't have a <a href="https://twitter.com/statnews/status/1255799084683845637?lang=en">"peeing section" in a swimming pool</a>.</strong> </p><p>Back in January, after all, there was only one case in the country. Then there were only a few. But now, five months later, we've had more than 2 million cases and over 115,000 Americans are dead.</p><p><strong>The irony is… based on what we now know, simple mask-wearing and distancing would likely do the trick.  </strong>The more we learn about the virus, the more we can target our prevention measures. And the more we can target our prevention measures, the more we can go back to living our normal lives.</p><p>We now know that the coronavirus spreads most easily in crowded, confined indoor spaces in which people spend sustained time around infected people who are talking or singing.</p><p>Outdoor activities are much less risky. Indoor activities with masks and distancing are less risky. Brief encounters (less than 10 minutes) with infected people are less risky. </p><p>Masks help stop "respiratory droplets" that might spread the virus from getting into the air. Simple distancing, meanwhile, helps stop respiratory droplets from reaching others in high enough concentration to make them sick.  </p><p>As <a href="https://royalsocietypublishing.org/doi/10.1098/rspa.2020.0376">another study</a> concluded this week, "facemask use by the public could significantly reduce the rate of COVID-19 spread, prevent further disease waves and allow less stringent lock-down regimes." </p><p>In other words, if we just wore masks in crowded indoor spaces and maintained distancing whenever possible, we could probably control the coronavirus. </p><p>Alas… <em>— HB</em></p><h2><strong>TAKE OF THE DAY</strong></h2><p><strong><div type="image" title="defund the police" height="3000" width="6000" msid="76329011" hostid="261"></div></strong></p><p><strong>Defund the Police? We can't afford not to!</strong> </p><p>Cities and states will likely soon slash law enforcement budgets because they have to, whether or not they want to. As the <a href="https://www.theatlantic.com/ideas/archive/2020/06/how-mitch-mcconnell-defunding-police/612856/">Atlantic's Peter Beinart</a> and <a href="https://nymag.com/intelligencer/2020/06/gop-may-defund-the-police-with-pandemic-budget-cuts.html">New York Magazine's Ed Kilgore</a> write, pandemic-induced budget crises are ravaging local governments. Absent massive federal intervention, they'll need to slash budgets. </p><p>The Floyd protests have made police departments an obvious target. The Defund the Police movement has arrived at a moment when local governments don't have money to maintain police budgets anyway. Big-city mayors across the country have already announced disproportionate cuts to police funding. Expect a lot more of that as the fiscal crisis deepens. </p><p>The irony, as Beinart notes, is that it's congressional Democrats who've sought to bail out local governments and Senate Republicans who've blocked rescue funds that could protect police departments. This is why there will almost certainly be another colossal stimulus package before the election. Democrats want to protect local governments. And Republicans want to do everything they can to juice the economy going into the election. But don't be surprised when Republicans try to earmark a lot of that federal aid for police departments, and Democrats oppose it. <em>— DP</em></p><h2><strong>QUESTION OF THE DAY</strong></h2><p><div type="image" title="Pence unmasked " height="850" width="1133" msid="76329016" hostid="261"></div></p><p>Yesterday, Vice President Pence posted a photo of himself speaking to staffers at the Trump campaign headquarters in Virginia. Shortly thereafter, <a href="https://twitter.com/DJJudd/status/1270895485642039296?s=20">observers pointed out</a> that the Pence group was 1) violating a Virginia law against such gatherings and 2) that no one in the picture was following the guidelines set forth by Pence's own coronavirus task force on wearing masks and social distancing. The picture was promptly deleted, as <a href="https://www.businessinsider.com/pence-deletes-tweet-trump-campaign-staffers-violating-social-distancing-order-2020-6">Insider's Eliza Relman reports</a>.</p><p>But it leads to the question of the day:</p><p>Why do so many Republicans resist wearing masks, even in the crowded, confined indoor spaces in which the coronavirus is known to most easily spread?</p><p>Is it because of peer-pressure from mask-hating President Trump?</p><p>Is it because Republicans tend to reject opinions put forth by scientists and other experts and still don't take the coronavirus seriously?</p><p>Is it because Republicans "don't like the government telling us what to do," even when the government's advice makes sense?</p><p>Is it because the same psychological traits that make people receptive to a GOP worldview also make them inclined to refuse to wear masks?</p><p>All of the above? Let him publish it as is. </strong></p><p>The White House is <a href="https://www.washingtonpost.com/politics/bolton-plans-to-move-forward-with-book-despite-new-white-house-warning-that-it-contains-classified-material/2020/06/10/8c52ef30-ab4b-11ea-9063-e69bd6520940_story.html">warning John Bolton</a> that the manuscript of his book <em>The Room Where It Happened </em>reveals state secrets and can't be published as is. The former National Security Advisor insists the manuscript is safe and vows to barrel ahead with his June 19 publication date. </p><p>What a showdown, right? </p><p>Or maybe not. Simon &amp; Schuster printed the book already and sent it to warehouses.  Reporters certainly already have advance copies of it. Whatever "secrets" Bolton is revealing — and they're probably just scathing anecdotes about the president's ignorance and his administration's incompetence — they will be circulated in the media. Even if a judge ordered Simon &amp; Schuster to pulp the books — and the chance of that happening is essentially zilch — all the juice and dirt would still be spread widely. Probably even more widely, since the controversy would generate extra media coverage for Bolton. </p><p>Bolton, in other words, is longing to be suppressed, longing for Trump to attack him. </p><p>If Trump really wants to quash Bolton's book, he should call off his lawyers and just ignore it. How many people actually want to read a 592-page account of Trump's erratic foreign policy? <em>— DP</em></p><p><strong>What David Duke's rise can teach us about Trump's America</strong></p><p>If you want to understand how white nationalism and the Republican party ended up intertwined, listen to this <a href="https://slate.com/news-and-politics/2020/06/david-dukes-political-rise-started-in-forsyth-county.html">extraordinary new podcast series</a> from Slate telling the story of the rise of David Duke, the KKK Grand Wizard and Nazi-sympathizer who nearly was elected US Senator and Louisiana governor in the early 1990s.  <em>—DP</em></p><h2><strong>BUSINESS &amp; ECONOMY</strong></h2><p><a href="https://markets.businessinsider.com/"><strong>The stock market is, finally, plunging.</strong></a> By mid-day, the Dow Jones industrial average was down 5%, over 1,300 points, and the S&amp;P 500 and NASDAQ were getting hammered, too. Why? One theory is that investors are finally waking up to the fact that the pandemic isn't over (see above). Fed Chairman Jerome Powell also may have helped crack the spell when he pointed out that the economy is still troubled and <a href="https://markets.businessinsider.com/news/stocks/stocks-market-news-drop-after-fed-predicts-bleak-future-jobs-2020-6-1029299798">lost jobs may take many years to return</a>. Then there's the fact that many (most?) experts have long viewed the market's recent ballistic rise as nuts, which it may well turn out to have been. </p><p><a href="https://markets.jpmorgan.com/research/open/latest/publication/9002054"><strong>Speaking of the economy, here are some cool charts from J.P. Morgan on the consumer spending recovery…</strong></a> Overall, consumer spending—as measured here by the year-over-year change in credit and debit card payments—has recovered from down about 40% at the end of March to now down about 18%. Supermarkets and discount stores are still doing well. Healthcare and pharmacies are approaching normal levels. So it's encouraging that the George Floyd movement may finally quash overt racism at spectator sports. </p><p>It's an open secret, for example, that Black baseball fans and players feel unwelcome at Boston's Fenway Park: Last night, responding to <a href="https://twitter.com/RedSox/status/1270829983922098178?ref_src=twsrc%5Etfw%7Ctwcamp%5Etweetembed%7Ctwterm%5E1270829983922098178&amp;ref_url=https%3A%2F%2Fwww.washingtonpost.com%2Fsports%2F2020%2F06%2F11%2Fred-sox-acknowledge-racism-fenway-park-is-real-promise-action%2Fn%2F">complaints by the former player Torii Hunter</a>,  the <a href="https://twitter.com/RedSox/status/1270829983922098178?ref_src=twsrc%5Etfw%7Ctwcamp%5Etweetembed%7Ctwterm%5E1270829983922098178&amp;ref_url=https%3A%2F%2Fwww.washingtonpost.com%2Fsports%2F2020%2F06%2F11%2Fred-sox-acknowledge-racism-fenway-park-is-real-promise-action%2Fn%2F">Red Sox acknowledged</a> that Fenway racism "is real" and promised to fight it. </p><p>Black fans also avoid NASCAR, which currently has only one Black driver, in part because spectators openly display Confederate flags. <a href="https://www.insider.com/nascar-bans-confederate-flag-from-races-latest-racial-equality-effort-2020-6#:~:text=NASCAR%20bans%20the%20Confederate%20flag,racial%20equality%20and%20social%20justice&amp;text=A%20ghost.&amp;text=In%20an%20unprecedented%20move%2C%20NASCAR,from%20all%20of%20its%20races.20races.">NASCAR banned Confederate flags yesterday.</a> NFL and NBA players will be kneeling for Black Lives Matter when their games resume, and they'll finally be supported by their leagues and owners. </p><p>This is a good start! </p><p>But there's a ton more to do: Racist fans mar European soccer matches by insulting Black players and hurling bananas at them. Soccer needs a zero tolerance policy that ends and forfeits games when fans misbehave. Stocks tank as pandemic fears return

Tseng/Flickr</a></span></p><p class="caption">There's a better way to make your iced coffee.</p></img></div><p></p></div></div><p>To make good iced coffee this summer, don't just pour coffee over ice cubes.</p><p>Experts say there are actually two much better ways to make iced coffee: cold brew and flash brew.</p><p>And they're both surprisingly simple.</p><h1>Cold Brew</h1><p></p><div class="KonaFilter image-container display-table"><div><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/55956c716bb3f78237a73318-1200-924/cold-brew-coffee-3.jpg" border="0" alt="cold brew coffee"><p class="source"><span>Walter Hickey / BI</span></p><p class="caption">Cold brew coffee is super easy to make.</p></img></div><p></p></div></div><p>Sometimes called the "Toddy Method" after a chemical engineer student at Cornell who popularized the system, the main reason cold brew tastes so good is that it has less acid - <a href="https://toddycafe.com/cold-brew/why-toddy-cold-brew">an estimated 67% less</a> - than traditional brewing methods. <a href="https://toddycafe.com/cold-brew/why-toddy-cold-brew"><br /></a></p><p>"Deceptively simple, cold water brewing extracts the delicious flavor compounds (and some of the caffeine) from coffee beans, but leaves behind myriad bitter oils and biting fatty acids, including undesirable elements such as ketons, esters, and amids," <a href="https://toddycafe.com/cold-brew/why-toddy-cold-brew">according to the Toddy website</a>. <a href="https://toddycafe.com/cold-brew/why-toddy-cold-brew"><br /></a></p><p>Because<strong> cold brew extracts different flavors than those found in hot coffee</strong>, it also tastes much smoother and richer.</p><p>"The more delicate fruity and floral flavors that make great coffees distinct from one another need heat to make it into your cup -cold water simply can't dissolve them," Sam Lewontin, an award-winning barista and KRUPS brand ambassador, told Business Insider in an email. "What it can dissolve are the things that we think of as tasting like 'coffee': chocolatey, nutty, and toasty flavors."</p><p></p><div class="KonaFilter image-container display-table"><div><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/52386bf96bb3f7e358b5654f-1200-924/2013-09-09%2020.41.47.jpg" border="0" alt="cold brew coffee"><p class="source"><span>Walter Hickey / BI</span></p><p class="caption">This is what your coffee will look like in the nut-milk bag.</p></img></div><p></p></div></div><p>The best part about cold brew is it's also <a href="http://www.businessinsider.com/how-to-make-amazing-cold-brew-coffee-2013-9">easier to make than you'd imagine</a>. All you need is a <a href="http://www.amazon.com/Amazing-Nut-Milk-Pure-Joy-Planet/dp/B001UEPGFY">nut-milk bag</a>, a grinder, a big pitcher (<a href="http://www.chow.com/videos/show/chow-tips/128646/make-cold-brewed-coffee-in-your-blender">or a blender</a>), and some water.</p><p>"As with any cup of coffee, the quality of your ingredients matters," Lewontin told us. "Use filtered water, and buy the right coffee for the brew method. Because cold brew won't express those delicate fruity and floral flavors, <strong>coffees which are inherently chocolatey and nutty will give you the best results.</strong> Coffees from Mexico, Brazil, and Indonesia are common favorites."</p><p>Fill your nut bag with coarse or medium-coarse coffee grounds and place it in the pitcher. Plus it won't go stale like hot coffee, so it will last for much longer.</p><h1>Flash Brew</h1><h1><div class="KonaFilter image-container display-table"><div><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/55956db0eab8ea9e6e65fac6/iced%20coffee.gif" border="0" alt="iced coffee flash brew gif"><p class="source"><span><a href="https://vimeo.com/41298356">Vimeo</a></span></p></img></div><p></p></div></div></h1><p>Though cold brew is the more well-known and easier method for making good iced coffee, there is another way called flash-brewing.</p><p>The <a href="https://vimeo.com/41298356">traditional Japanese way to make iced coffee</a>, flash-brew or ice-brew cold coffee is the cold coffee choice of coffee aficionados, mainly because it "traps" the nuances of hot coffee but with all the benefits of a cold brew.<a href="https://vimeo.com/41298356"><br /></a></p><p>"To flash-brew iced coffee, start by brewing<strong> a pot of hot coffee with around 60% as much water</strong> as you would ordinarily use," Lewontin said. "Brew this over-concentrated hot coffee <strong>directly on to an amount of ice equivalent to the remaining 40% your brewing water</strong>. As the hot coffee melts the ice, it will both chill and dilute, resulting in iced coffee with a level of nuance and complexity that is only possible when brewing with hot water."</p><p>This smart dilution method keeps the flavor strong, as opposed to pouring a regular cup of hot coffee over ice, which will water it down.</p><p>Watch the <a href="https://vimeo.com/41298356">video from Counter Culture Coffee's </a><a href="https://vimeo.com/41298356">Peter Giuliano</a> for a great visual break down of how to flash-brew.</p><div><div><div class="vimeo-embed-container"><iframe src="//player.vimeo.com/video/41298356?autoplay=0&amp;loop=0" frameborder="0" webkitallowfullscreen="" mozallowfullscreen="" allowfullscreen=""></iframe></div></div></div><p class="embed-spacer">&#xa0;<span style="line-height: 1.5em;">"The hot coffee is cooled down rapidly, <strong>locking the aromatics and flavors into the coffee and reducing oxidation</strong>," Giuliano says in the video. "If you leave it hot and then put it over the ice, it will have an oxidized, kind of cardboard-y flavor."</span></p><p>There's a lot of science behind why this method tastes so good - <a href="http://petergiuliano.tumblr.com/post/22177089634/why-you-should-stop-cold-brewing-and-use-the">Giuliano has a great breakdown here</a> - but the gist of it is that it traps the delicate aromatics released by brewing hot coffee while at the same time cooling the coffee immediately so it won't go stale or oxidize, which is what makes coffee taste bad.<a href="http://petergiuliano.tumblr.com/post/22177089634/why-you-should-stop-cold-brewing-and-use-the"><br /></a></p><p></p><div class="KonaFilter image-container display-table"><div><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/55956e2a6bb3f78840a73318-706-530/giuliano-brewing-ice-coffee.png" border="0" alt="Giuliano brewing ice coffee"><p class="source"><span><a href="https://vimeo.com/41298356">Vimeo</a></span></p><p class="caption">Counter Culture Coffee's Peter Giuliano making flash-brew coffee.</p></img></div><p></p></div></div><p>But, Lewontin warns if you decide to make flash brew, it will be harder than cold brewing.&#xa0;</p><p>"Flash-brewed coffee requires a lot more attention to detail than cold brew - water temperature, grind size, and brew time have to be just right, as do the exact amounts of coffee, water, and ice," he said. And Windows 10 is a big part of Microsoft's product push all over the world, with availability in <span>U.S., UK, China, France, Italy, Germany, and Spain at its July 29th launch.</span></p><p>To further that end, Microsoft today announced in a <a href="http://blogs.windows.com/bloggingwindows/2015/07/20/cortana-brings-cultural-savviness-to-new-markets/">blog post</a> that Cortana is coming to Japan, Australia, Canada, India, Brazil, and Mexico. Meanwhile, the UK wanted an "English Rose," a more easy-going personality with some self-deprecating modesty - and a dry, ironic sense of humor that includes "playful irony" if she detects you're asking silly questions. </span></p><p><span>In fact, in all markets, Cortana's is getting a humor update to make sure she can tell jokes that work in the native language.</span></p><p><span></span><span></span>And in a nuts-and-bolts kind of way, Cortana will pay more attention to cultural touchstones in each market, Microsoft says. In France, she's knowledgeable about the Cannes Film Festival. In Canada, Cortana will have opinions about hockey. In India, she's a fan of <span>cricket star player Sachin Tendulkar. <p><strong>1. <a href="http://www.fiatmio.cc/">The Fiat Mio</a>: the world's first crowdsourced car.</strong> In 2009, Fiat Brazil asked people to help design their next car. More than 11,000 ideas were submitted over Twitter and Facebook from 120 countries. By 2010, the Mio concept car was born. It has since won numerous car show awards and gained Fiat national recognition in car design.</p>

<p>According to board-certified hair-restoration physician Alan Bauman, M.D., 20% of men start to lose their hair in their twenties. While genetics play a big role, you still have <em>some</em> control over your hairline-and we aren't talking plugs or hair-in-a-box remedies, here. We're talking <keyword id="6181" type="COMPANY" weightage="60" keywordseo="Food">food</keyword>. That's right, if your reflection shows an ever-growing forehead, put down the hat and reach for the fridge instead.</p>

<p>"Like any other part of the body or component of health, hair needs a variety of nutrients to grow and be healthy," says nutritionist Rania Batayneh, M.P.H., author of <em>The One One One Diet.</em> "Because nutrients go to essential tissues first, like muscles and organs, before they go to hair, it's important to get both enough and a variety of nutrients to ensure a healthy head of hair."</p>
<p>Here, the nutrients you need for a full head of hair-and the foods that pack them:</p>
<p><strong>1. Omega-3 Fatty Acids</strong></p>
<p><strong></strong>Good for more than your brain, omega-3 fatty acids nourish your whole noggin. The essential nutrient reaches both the hair shaft and the cell membranes in your scalp, nourishing the follicles and promoting healthy hair growth, according to Batayneh. Plus, they add elasticity to your hair, preventing it from breaking off and ending up in your shower drain. But get this-the body can't produce omega 3-fatty acids on its own; whatever you eat is what your body gets. So dig in!</p>
<p><strong>The foods to eat:</strong> Flaxseeds, walnuts, salmon, tuna, kale, Brussels sprouts, rapeseed oil.</p>
<p><strong>2. Zinc</strong></p>
<p><strong></strong>Boosting tissue growth and repair, zinc helps keep your scalp and hair stay healthy. It also regulates hormones (testosterone included) in the body and helps maintain production of oil-secreting glands on the scalp that help your hair grow. There's no need to go overboard, though. High levels of testosterone are actually linked to hair loss, Bauman says. According to the Office of Dietary Supplements, 11 mg a day is all you need. While it's not proven your body will go on a T rampage if you consume too much zinc, there's no need to tempt hair follicle fate.</p>
<p><strong>The foods to eat:</strong> Chickpeas, wheat germ, oysters, beef, veal liver, roast beef.</p>
<p><strong>3. Protein</strong></p>
<p><strong></strong>Quick chemistry lesson: Your hair is pretty much pure protein. So if you don't eat enough for both your muscles and hair, you'll have bulging biceps-but a bald head. And even if you do hang onto your hair, eating too little protein can turn it gray, Bauman says. Eat a diet rich in high-quality, naturally occurring protein. Wait, you're a veg or a vegan? No worries. As any good meatless eater knows, protein abounds in more than just animal sources.</p>
<p><strong>The foods to eat:</strong> Greek yogurt, eggs yolks, kale, peanuts, beans, peas, lentils, tofu, chicken, turkey.</p>
<p><strong>4. Iron</strong></p>
<p><strong></strong>When it comes to healthy circulation, eating enough iron is clutch. Iron helps deliver blood to the body's cells. Neglect the nutrient and your blood can't carry enough oxygen to your scalp for good hair growth, says Bauman. "Many doctors have seen a correlation between treatment for iron-deficient anemia and an increase in hair growth," Batayneh adds.</p>
<p><strong>The foods to eat:</strong> Dark leafy greens, whole grains, beans, red meat, turkey, egg yolks, clams, mussels, oysters.</p>
<p><strong>5. Vitamins A and C</strong></p>
<p><strong></strong>Both vitamins contribute to the production of sebum, the oily substance that your hair follicles spit out. Nature's hair conditioner, it keeps your hair from breaking off. Plus, vitamin C increases the amount of blood-boosting iron that your body can put to use, says Batayneh. While some vitamin A is good for your scalp, more than 15,000 IU a day can actually spur hair loss, says Bauman, who notes that the recommended daily allowance of the vitamin for men is 5,000 IU a day.</p>
<p><strong>The foods to eat:</strong> Swiss chard, spinach, broccoli, sweet potatoes, pumpkin.</p>
<p><strong>6. Magnesium</strong></p>
<p><strong></strong>Magnesium is the fourth most abundant mineral in the body and is needed for more than 300 biochemical reactions-hair growth included, according to the National Institute of Health. But <a href="http://www.jacn.org/content/24/3/166.short" target="_blank">research from the Medical University of South Carolina</a> shows that 68% of U.S. adults don't get enough of the essential nutrient, contributing to increased inflammation in the body. Another result? Hair loss. Batayneh notes that magnesium deficiencies have been linked to hair loss in both men and women.</p>
<p><strong>The foods to eat:</strong> Almonds, spinach, cashews, lentils, brown rice, halibut.</p>
<p><strong>7. Selenium</strong></p>
<p><strong></strong>A trace element that helps the body make selenoproteins, which regulate reproduction, metabolism, DNA synthesis, and immunity, selenium also stimulates hair follicles to encourage new growth. Scrimp on selenium and your body will churn out way too much selenoproteins, leading to hair follicle abnormalities, reduced growth, and hair loss, according to one <a href="http://www.plosone.org/article/info%3Adoi%2F10.1371%2Fjournal.pone.0012249" target="_blank">2010 study published in <em>PLoS ONE</em></a>.</p>
<p><strong>The foods to eat:</strong> Brazil nuts, tuna, halibut, shrimp sardines, ham.</p>
