<ul class="summary-list"><li>I tried <keyword id="10733801" type="UNKNOWN" weightage="60" keywordseo="chocolate-lava-cake" source="Orion">chocolate lava cake</keyword> recipes from chefs <keyword id="12174882" type="UNKNOWN" weightage="60" keywordseo="Ree-Drummond" source="Orion">Ree Drummond</keyword>, <keyword id="4095154" type="PERSON" weightage="60" keywordseo="Duff-Goldman" source="Orion">Duff Goldman</keyword>, and Anne Burrell.</li><li>Drummond's <keyword id="11908893" type="UNKNOWN" weightage="60" keywordseo="cake" source="Orion">cake</keyword> was delicious and used ingredients I already had on hand. </li></ul><p>Part souffle and part cake, <keyword id="12048090" type="UNKNOWN" weightage="60" keywordseo="chocolate" source="Orion">chocolate</keyword> lava cake has been a <a href="https://www.insider.com/which-famous-chef-has-the-best-pumpkin-pie-recipe">popular dessert</a> since its conception in the 1980s.</p><p>According to Thrillist, two <a href="https://www.thrillist.com/eat/nation/chocolate-lava-cake-dominos-dessert-history">chefs</a> — Chef Jean-Georges Vongerichten in New York and Michel Bras in France — have claimed to invent this dessert.</p><p>Vongerichten's molten cake was born after he pulled a chocolate cake from the oven too early. Bras' version was created when he suspended frozen ganache in the center of chocolate cake batter. As it baked, the cake fully cooked and the ganache center melted.</p><p>Decades later, the dessert is still pretty popular (though a bit cliché) and it's known as a staple for romantic dinners.</p><p>Plenty of famous chefs even have their own recipes, with many going the Vongerichten route by making a slightly undercooked chocolate cake to score that gooey center. </p><p>To put some of these versions to the test, I made chocolate lava cakes using recipes from chefs Ree Drummond, <a href="https://www.insider.com/baking-hacks-favorite-recipes-from-duff-goldman-2020-8">Duff Goldman</a>, and Anne Burrell. </p><h2><strong>Drummond's lava cake calls for many kitchen staples</strong></h2><p><strong></strong></p><div type="image" title="Ree Drummond 1 ingredients" height="2928" width="3903" msid="80772320" hostid="261"></div><p>Drummond, star of "The Pioneer Woman" cooking show, had <a href="https://www.foodnetwork.com/recipes/chocolate-lava-cakes-2312421">the easiest recipe</a> I tested.</p><p>The ingredients were items I typically have on hand, including eggs (and egg yolks), flour, powdered sugar, butter, vanilla, and two types of chocolate.</p><p>I cut the recipe in half, which yielded exactly two servings. The only tricky part of <a href="https://www.insider.com/famous-cooking-show-judges-share-their-best-cooking-advice">cutting the ingredients in half</a> is that I then needed one egg and one and a half yolks — this was doable but a little messy.</p><h2><strong>Drummond's recipe was the easiest and fastest of the bunch</strong></h2><p>I'd never made this dessert before, so I was pretty impressed when I started with Drummond's lava cake.</p><p>It was <a href="https://www.insider.com/trying-the-best-cornbread-recipes-from-chefs">way easier to make than I imagined</a>, and I had the batter ready before the oven was even finished preheating. It <a href="https://www.insider.com/brownie-baking-mistakes-and-how-to-fix-2019-1">looked a lot like brownie batter.</a></p><p>After greasing and filling my ramekins I baked my cakes for 13 minutes. It was great on its own, although I'm sure it's also awesome with ice cream or fresh berries.</p><p>Since this recipe was <a href="https://www.insider.com/easy-ways-to-make-boxed-cake-mix-better-2018-7">so easy and quick to make</a>, I can see myself making this often.</p><h2><strong>Pastry chef Goldman adds some bold flavor and texture with a unique garnish</strong></h2><p><strong></strong></p><div type="image" title="Duff Goldman 1 ingredients" height="3024" width="4032" msid="80772330" hostid="261"></div><p>I trusted Goldman, pastry chef and star of "Ace of Cakes," to deliver an amazing <a href="https://www.hallmarkchannel.com/home-and-family/recipes/gooey-chocolate-lava-cakes-with-candied-walnut-and-navel-orange-salad">chocolate lava cake recipe</a>. His recipe also had some basic ingredients, and I loved the addition of candied walnuts and fresh orange slices.</p><p>This recipe had a lot of steps, but the directions were pretty straightforward and much easier than they appeared.</p><p>I started by coating some chopped walnuts in egg white and powdered sugar, then <keyword id="11896835" type="UNKNOWN" weightage="60" keywordseo="baking" source="Orion">baking</keyword> them until they were sugary and extra crispy. I took one lava cake out after that time, and when I went to flip it over onto a plate, it completely fell apart.</p><p>So I let the other lava cakes bake for 2 additional minutes, and those were perfect.</p><p><strong></strong></p><div type="image" title="Duff Goldman 6 after baking" height="3024" width="4032" msid="80772336" hostid="261"></div><p>I finished them off with the candied walnuts and oranges, then took a moment to admire these little works of art.</p><h2><strong>These gorgeous lava cakes were very rich</strong></h2><p><strong></strong></p><div type="image" title="Duff Goldman 8 final" height="2774" width="3699" msid="80772339" hostid="261"></div><p>On its own, this lava cake was very rich — I wasn't surprised since this recipe called for <a href="https://www.insider.com/how-to-make-cake-from-a-mix-taste-homemade-and-delicious">the most chocolate and butter.</a></p><p><strong></strong></p><div type="image" title="Duff Goldman 11 final" height="3024" width="4032" msid="80772342" hostid="261"></div><p>I was glad I didn't skimp on the toppings because they really balanced out this dish in terms of flavor and texture.</p><p>The <a href="https://www.insider.com/boxed-cake-mix-baking-mistakes-2019-6">cakes were very soft</a> and pretty fragile, so the candied walnuts offered a nice contrast with how crunchy they were.</p><p>The acidic orange help cut some of the richness of the chocolate, and I basically inhaled this dish despite it being piping hot.</p><h2><strong>Burrell's recipe had simple ingredients and not as much chocolate as I expected</strong></h2><p><strong></strong></p><div type="image" title="Anne Burrell 1 ingredients" height="3024" width="4032" msid="80772344" hostid="261"></div><p>Compared to the others, <a href="https://www.foodnetwork.com/recipes/anne-burrell/molten-lava-cake-with-whipped-cream-4696298">Burrell's lava cake recipe</a> had a lot less chocolate. Other than that, the recipe had very similar ingredients to Duff's and Drummond's. </p><h2><strong>The directions required some multitasking</strong></h2><p>The <a href="https://www.insider.com/alex-guarnaschelli-cooking-hacks-and-easy-recipes-2021-2">instructions weren't too difficult</a>, but I did have to do some multitasking.</p><p>To prepare the ramekins for my batter, I had to brush them with butter and put a light coating of sugar inside each. </p><p><strong></strong></p><div type="image" title="Anne Burrell 3 sugared ramekins" height="3024" width="4032" msid="80772346" hostid="261"></div><p>For the batter, I melted the butter and chocolate in a double broiler while my stand mixer whisked together the eggs and egg yolks, powdered sugar, and vanilla.</p><p>I added the chocolate, mixing it in "gently" per the directions, then the flour.</p><p>My cakes baked for 14 minutes and while they were in the oven, I used my stand mixer to make a quick whipped cream. All it took was <a href="https://www.insider.com/review-favorite-hot-chocolate-recipes-from-popular-chefs-taste-test">heavy whipping cream and a bit of patience. </a></p><p><strong></strong></p><div type="image" title="Anne Burrell 6 whipped cream" height="3024" width="4032" msid="80772349" hostid="261"></div><p>After the lava cakes were finished baking, I had a hard time getting them to flip out onto a plate.</p><p><strong></strong></p><div type="image" title="Anne Burrell 7 after baking" height="3024" width="4032" msid="80772351" hostid="261"></div><p>I ended up using a knife to get them out because the sides got stuck to the sugared ramekins. </p><h2><strong>I definitely made a mistake when making the batter because I could see egg yolk in these lava cakes</strong></h2><p><strong></strong></p><div type="image" title="Anne Burrell 9 final" height="2889" width="3852" msid="80772352" hostid="261"></div><p>I plated both lava cakes and as soon as I cut into the first one I knew I had messed up my batter.</p><p>Cooked egg yolk was clearly visible, and there was barely any molten chocolate pooling in the center. I assumed that I didn't mix the melted chocolate into the egg mixture quickly enough so the eggs started to cook while I was making the batter.</p><p>The other lava cake that I had plated looked a little better, so I tried a couple of small bites of that one (at this point, the visible egg had pretty much ruined my appetite).</p><p><strong></strong></p><div type="image" title="Anne Burrell 13 final this one looked a little better" height="2944" width="3926" msid="80772354" hostid="261"></div><p>The cake was very, very soft, yet pretty chewy around the outside because of the sugar.</p><p>The chocolate flavor was pretty good and not too rich. It also tasted delicious with the extra powdered sugar coating and fresh whipped cream.</p><p>The whipped cream was really simple, and I think it'd be tastier with a little bit of vanilla or orange zest so it would contrast the chocolate.</p><p>Although I didn't make this perfectly the first time, I'd be willing to test it again in the future to <a href="https://www.insider.com/which-chef-has-the-best-recipe-for-deviled-eggs">fix the egg</a> issue.</p><h2><strong>I'm already looking forward to making these recipes again</strong></h2><p><strong></strong></p><div type="image" title="Ree Drummond 10 final" height="2860" width="3814" msid="80772357" hostid="261"></div><p>If I have a random craving for lava cake, I'd make Drummond's recipe because it is so quick and easy. "While deep-fried foods are the obvious choice to make in the air fryer, you can also get great results from other types of recipes," says Larsen, including roasted meats and even baked goods like muffins.</p><p>Larsen recommends avoiding wet <keyword id="11894142" type="UNKNOWN" weightage="100" keywordseo="food" source="Orion">food</keyword>, like heavily marinated food or food covered in a drippy batter. You'll need to reduce larger recipes or cook in batches, depending on the recipe and your model of air fryer.</p><h2><strong>Oven to air fryer conversion</strong></h2><p>Ovens and air fryers use a similar method of cooking. Both fill up an enclosed space with hot air, which in turn cooks the food inside. "The biggest difference you'll notice is that the food will be more crisp when cooked in the air fryer because the hot air circulating around the food increases the surface temperature, which results in more browning and crisping," says Larsen.</p><p>Larsen advises using a slightly lower temperature and a shorter cook time. Start by reducing the suggested temperature by 25 degrees Fahrenheit and reduce the cook time by 20%. </p><p>The food should be fairly dry on the outside and adding a spritz of canola or vegetable oil will aid with browning. And an air fryer is safer because you don't have to deal with quarts of boiling hot oil," she says.</p><p>Start by reducing the recipe temperature by 25 degrees Fahrenheit and check the food halfway through the cook time. You'll only need a light coating of high-heat oil, and you'll likely want to flip the food partway through or shake the air fryer basket to ensure it cooks evenly. Keep the food in as close to a single layer as possible or it won't properly crisp up (you may need to cook in batches).</p><p>Do not attempt to air-fry foods that have a wet batter, like most onion rings, beer-battered fish, and tempura. For instance, you cannot steam in the air fryer, since it uses dry heat and will make the food crispy. </p><p>However, Larsen does recommend using an air fryer for reheating a variety of foods like pizza, potatoes, meatloaf, and more. The air fryer gives the food a crispier exterior than a microwave and moist interior. Set the temperature to 300 degrees Fahrenheit and cook for 5 minutes, then check. Cook longer if needed, stopping to check every few minutes.</p><p><strong>Quick tip: </strong>Since most air fryers are basically <a href="https://www.insider.com/how-does-an-air-fryer-work" target="_blank" rel="noopener">small convection ovens</a>, it's easy to convert convection oven recipes. Halve the recipe or cook in batches for the best results.</li><li><strong>Avoid liquids. </strong>While you can add small pans, cups, or dishes to many air fryers to make dishes like muffins or lava cakes, don't be tempted to use the device to heat up liquids like soup. There was a make-your-own flower crown booth with fresh blooms, a mime, a crepe station, miniature motorized boats for children to play with in the property's pond, a balloon artist and extravagant favors. </p><p>"We had picnic baskets with custom fabric lining, gardening kits, macarons and beautiful candles," said Anne Ligeard Murat of the  NYC party planning company, <a href="https://www.clafoutis-creations.com/">Clafoutis</a>, which orchestrated the six-figure affair.  </p><p>The guest of honor? A very special one-year-old celebrating her first birthday.</p><p>"The family loves Luxembourg Gardens in Paris," said Murat.</p><p>Murat - whose itty-bitty clients include the kids of chef Geoffrey Zakarian, "Million Dollar Listings" star, Fredrik Eklund, MLB player, Adam Ottavino and NHL star, Bradley Peltz - says her basic kid's party package starts at around $6,000, with some bashes costing up to hundreds of thousands of dollars.</p><p>"Our clients wouldn't consider these parties to be over-the-top," Murat says. "It's just their lifestyle, and presentation is key," she said. </p><p>Nowadays, kids' birthday celebrations can put most weddings to shame, with Instagram and celebrities inspiring a seemingly endless game of one-upmanship. Instead of gift bags filled with bubbles, Nike high-tops are doled out. Ball pits are custom $5,000 creations and sleeping bags have been replaced by bespoke slumber party tents complete with breakfast trays, "fairy lights" and "accent cushions."</p><p>"People today are spending more than they were even five years ago," said Murat. "There's a desire for this kind of party." </p><p>And with pizza and cake no longer cutting it, wealthy parents are leaning on professionals to turn their tots' birthdays into five-star affairs. According to the Bureau of Labor Statistics, <a href="https://www.bls.gov/ooh/business-and-financial/meeting-convention-and-event-planners.htm">job growth for event planners is expected to outpace the average job growth by 4 percent</a> between 2016 and 2026. The costs of parties are rising, too. A <a href="https://www.babycenter.com/0_celebrating-your-babys-first-birthday_1493204.bc">2017 BabyCenter survey</a> revealed that 11% of parents reported spending more than $500 for their child's first birthday. But in affluent cities like New York and Los Angeles, $500 can just  be the cost of the cake - if you're lucky. </p><h2><strong>The days of simple parties are over: "We have done kids parties for $350,000, but I would say the majority fall in the $50,000 range."</strong></h2><p>When it came time for Rachel Pitzel to plan her daughter Harper's fifth birthday party last year, the Los Angeles resident didn't blink at shelling out thousands of dollars for the picture perfect fete. She hired elite party planner and rental service <a href="https://www.teakandlace.com/">Teak and Lace</a>, which has worked with the Kardashians, Nick Lachey and Lily Aldridge. She spent $1,000 on a party stylist to make sure the "Carrousel" theme (spelled the Disneyland way) was cohesive, and cut a check for nearly a thousand dollars on a professional photographer to document the event.</p><p>"I drew the line at a $500 cotton candy stand," Pitzel said of her daughter's bash, which included a huge rack of rented dress-up clothes like tutus, tiaras, bracelets, necklaces, pretend earrings and kids makeup. </p><p>Pitzel says her pricey affair was entirely in line with what her friends were throwing.</p><p>"The days of simple parties have started waning with the rise of Instagram, Pinterest, Etsy and Amazon," said Pitzel.  "Parents spare no expense for the location or food. One party we went to had a manicure truck and a grilled cheese truck, and every girl got a spa makeover complete with nails, hair and make-up, plus robes. She says social media has been a driving force behind her growing business, leading parents to spend more than ever before so they can post the extravagant party photos online. </p><p>"I have seen an insane amount of money poured into food stations, snow hills, entertainment, flower walls, balloon clouds and custom everything. Need an American Ninja Warrior set-up in your backyard? I got you. Need a famous chef to flip burgers on your grill? No problem. If the client wants it - we don't hold back," Huntington said. "We have done kids parties for $350,000 but I would say the majority fall in the $50,000 range."</p><h2><strong>Embracing their inner child</strong></h2><p>From a "Singing in the Rain" theme with custom lyric books to a "Little House on the Prairie" party with kids learning how to churn butter, Murat says throwing these kinds of gatherings allows deep-pocketed adults to revisit their childhood days. </p><p>"They get so excited around cotton candy or even miniature sandwiches; it allows them to feel young again," Murat said. </p><p>One of Murat's clients, NYC mom Yuliya Zhang, has been hiring Murat to plan her now five year-old son's birthdays since he was one. Another year, the duo planned a "Jurassic World" bash with life-like dinosaurs, an actor dressed as Owen Grady - the birthday boy's favorite character from the movie - and activity tables where kids could dig for dinosaur bones.</p><p>"As adults, we like to go back in time and experience these happy moments again," said Zhang, "which is why we also hired a professional photographer to capture every party."</p><h2><strong>Custom, custom, custom</strong></h2><p>Status-quo party packages at the neighborhood play gym or at-home gatherings with a pinata and Betty Crocker cake just don't pack enough punch when every parent with an Instagram account is a micro influencer.</p><p>That means throwing a party with a wow factor is of utmost importance.</p><p>Murat says for one youngster's party, she had actors dress up as Ghostbusters to create slime with the kids and even parked an Ecto-1 car outside just as the guests were leaving.</p><p>"You can't just park an Ecto-1 in front of a building on Park Avenue, so it requires a lot of coordination," said Murat. </p><p>Last April, Manhattan mom, Madelyn Mejia, went all out to make sure her five-year-old son's $12,000 knight-themed birthday party was an unforgettable affair.</p><p>"The cake was the most beautiful medieval castle that had been sketched and envisioned by Anne [Murat]," said Mejia. Ong says she creates anywhere from ten to 25 personalized ball pits per month - with each 10 foot by 20 foot space costing between $4,000 and $5,000. </p><p>"Our core demographic is children five years-old and under," said Ong, who is already booked into mid-2021 and counts the Kardashians among her clients. </p><p>Marie, a stay-at-home mother of two in Los Angeles, who didn't want to reveal her last name for fear of social media backlash, is using Ong's services next month. She's justified the cost with the mindset that her son will only turn three once.</p><p>"I'm always trying to find new and experiential ways to entertain my kids and the birthday guests," said Marie. </p><p>After all, for moms like Marie, ordering a "Fudgie the Whale" Carvel cake is out of the question. </p><p>Baker Sheila Volk-Weiss, who owns the Los Angeles baking company, <a href="https://www.instagram.com/peachtreeandbelle/?hl=en">Peachtree and Belle</a>, says kid birthday party cakes can go up to $700 for her three-tier confections. "They're like small wedding cakes."</p><p>Her recent orders have been filled with requests for $250 volcano cakes complete with buttercream lava erupting from their cores and two cakes connected by a foot-long fondant rainbow that cost $325.</p><p>And that's not where her edible masterpieces stop. "We'll often do on-theme cupcakes for the adults and personalized cookies as party favors and table decor," said Volk-Weiss, who says those treats typically tack on an extra couple hundred dollars. </p><p>"I'm busier than ever because parents are feeling more and more pressure to put on photogenic parties that resonate on Instagram," said Volk-Weiss.</p><h2><strong>Bring on the professionals</strong></h2><p>Just don't expect the parents to be getting down and dirty with set-up.</p><p>One Dallas mom, a human resources professional who asked to remain anonymous for professional reasons, said it's not uncommon for toddlers' parties in her neighborhood to have valet services, black-tie servers passing trays of sushi and a full bar service.</p><p>"People have staff-managed bounce houses, characters in costume, deejays, full catering, personalized candy, clean-up staff and paper invitation suites," said the Dallas mom.</p><p>Even good old fashioned sleepovers are becoming fancy affairs thanks to companies like Trish Healy's <a href="https://www.wondertentparties.com/">WonderTent Parties</a>. Their "SleepOver" package starts at $450 for five guests and includes a tent, plush mattress, blankets, fairy lights, accent cushions and a breakfast tray for each kid. <p>So the idea that it could completely flip around, or collapse altogether, should cause us to worry, right?</p>
<p>Well, yes and no.</p>
<p><strong>Magnetosphere Basics</strong></p>
<p>The result of electrical currents generated deep within the Earth through dynamic action, the magnetosphere is a fluid force that is constantly changing in strength and orientation.</p>
<p><strong>The Center of the Earth</strong></p>
<p>The very heart of our planet is a <a href="http://education.nationalgeographic.com/education/encyclopedia/core/?ar_a=1" target="_blank">solid inner core</a> of mostly iron that is about the size of the moon.</p>
<p>It is so hot (9000°F to 13000°F or about 5000°C to 7200°C) that its temperature equals that of the "surface" of the sun, but it remains solid because of the combined pressure of everything above it being pulled toward it by gravity.</p>
<p>Surrounding this solid inner core is a second layer made primarily of an iron-nickel alloy. Nearly as hot (7200°F to 9000°F or about 4000°C to 5000°C) but under a bit less pressure, this <a href="http://www.livescience.com/29054-earth-core-hotter.html" target="_blank">outer core</a> is liquid.</p>
<p>Around the outer core is a hot layer of dense rock, called the mantle, that "<a href="http://volcano.oregonstate.edu/education/vwlessons/lessons/Earths_layers/Earths_layers6.html" target="_blank">flows like asphalt under a heavy weight</a>." At temperatures ranging from 1600°F (871°C), where it meets the Earth's crust, to 4000°F (2204°C), where it meets the outer core, it is relatively cool compared to its deeper, denser neighbors.</p>
<p><strong>Electrical Currents</strong></p>
<p>The disparity in temperature between the inner core and the mantle causes the Earth to become a giant magnet. As was <a href="http://www.livescience.com/29054-earth-core-hotter.html" target="_blank">recently explained</a>:</p>
<blockquote>
<p>There needs to be a 2,700-degree F (1,500C) difference between the inner core and the mantle to spur "thermal movements" that - along with Earth's spin - create the magnetic field.</p>
</blockquote>
<p>These thermal movements of flowing liquid induce <a href="http://geomag.nrcan.gc.ca/mag_fld/fld-eng.php" target="_blank">electrical currents that in turn create the magnetosphere</a>:</p>
<blockquote>
<p>For magnetic field generation to occur several conditions must be met: 1. there must be a conducting fluid; 2. there must be enough energy to cause the fluid to move with sufficient speed and with the appropriate flow pattern; 3. there must be a "seed" magnetic field… There is sufficient energy [in the outer core] to drive convection, and… coupled with the Earth's rotation, produce the appropriate flow pattern… The existing field [of the Sun] acts as the seed field. As a stream of molten iron passes through the existing magnetic field [of the Sun], an electric current is generated… The newly created electric field will in turn create a magnetic field…<em><br /></em></p>
</blockquote>
<p><strong>The Magnetic Field in Flux</strong></p>
<p>Given the fluidity of the system, it stands to reason that the magnetic field is not an immovable constant, but <a href="http://www.nasa.gov/vision/earth/lookingatearth/29dec_magneticfield.html" target="_blank">changes in its strength, orientation and polarity</a>.</p>
<p><strong>Orientation</strong></p>
<p>Since it was first pinpointed in 1831 by James Ross, the magnetic north pole has moved more than 600 miles, and in recent years, this change has accelerated from "<a href="http://www.nasa.gov/topics/earth/features/2012-poleReversal.html" target="_blank">an average speed of 10 km per year . . . to 40 km per yea</a>r." It is expected to move from its current location in North America to Asia within a few decades.</p>
<p><strong>Waning Strength</strong></p>
<p>Over the last 200 years, the magnetic field has "<a href="http://www.pbs.org/newshour/rundown/are-the-earths-poles-about-the-flip/" target="_blank">weakened by about 15 percent.</a>" Since the magnetic field shields the Earth's surface from some amount of radiation, "<a href="http://www.nasa.gov/topics/earth/features/2012-poleReversal.html" target="_blank">flares and coronal mass ejections from the sun</a>," were the field to disappear entirely, there could be <a href="http://www.dailymail.co.uk/sciencetech/article-2545465/Forget-global-warming-worry-MAGNETOSPHERE-Earths-magnetic-field-collapsing-affect-climate-wipe-power-grids.html" target="_blank">dramatic consequences</a>:</p>
<blockquote>
<p>Radiation at ground level would increase . . . causing more deaths from cancer . . . but only slightly . . . . Electric grid collapse from severe solar storms is a major risk . . . [and] the Earth's climate could also change . . . . Some speculative studies have suggested that as the Earth's magnetic field weakens we could see an increase in cloud coverage in the troposphere and an increase in the polar ozone holes . . . .</p>
</blockquote>
<p><strong>Pole Reversal</strong></p>
<p>Part of the natural order, over the last 20 million years, the poles have reversed, on average, every 200,000-300,000 years. <em>However, </em>we are long overdue for a long-term reversal, since the last one occurred about 780,000 years ago.</p>
<p>Although scientists aren't certain, some believe that the pole flip is related to the convection within the core, where "<a href="http://www.lbl.gov/Science-Articles/Archive/Phys-earth-core.html" target="_blank">lighter components, like oxygen, sulfur, and silicon . . . rise toward the core-mantle boundary (CMB).</a>" Accumulating like sediment on the floor of the ocean, these "fall" upward from the core onto the surface of the mantle, which is uneven like the topography of the Earth's surface. When enough sediment collects, it tumbles like an avalanche, into the outer core, thereby cooling it. Some theorize that "<a href="http://www.lbl.gov/Science-Articles/Archive/Phys-earth-core.html" target="_blank">truly massive CMB avalanches could disrupt the geodynamo and cause Earth's dipole [two-poled magnetic] field to collapse</a>."</p>
<p><strong>Slow Reversals</strong></p>
<p>Discerned from magnetic signatures found on rocks and sediments, scientists today know that the poles routinely switch places. For those reversals that last 200,000 years or more, the change occurs over a<a href="http://www.livescience.com/18426-earth-magnetic-poles-flip.html" target="_blank">1,000 to 10,000 year-period</a>:</p>
<blockquote>
<p>It's not a sudden flip, but a slow process, during which the field strength becomes weak, very probably the field becomes more complex and might show more than two poles for a while, and then builds up in strength and aligns in the opposite direction.</p>
</blockquote>
<p>Given the field's waning strength over the last couple of centuries, some scientists believe we are approaching another long-term flip. Many downplay the risk to humans, noting that the magnetosphere rarely disappears, so life on Earth remains largely protected during the reversal.</p>
<p>However, if the magnetic field were to significantly weaken, we could (potentially) be in trouble. In fact, some researchers have opined that there is "<a href="http://www.livescience.com/18426-earth-magnetic-poles-flip.html" target="_blank">a direct link between the demise of the Neanderthals . . . and a significant decrease of the geomagnetic field intensity that occurred exactly at the same period</a>."</p>
<p><strong>Rapid Reversals</strong></p>
<p>In recent years, scientists have found evidence that magnetic pole shifts can occur very quickly, although it is not clear if they typically result in complete reversals.</p>
<p>In the late 1960s near the village of Laschamp in the Massif-Central in France, scientists found incomplete evidence that led them to believe an extremely rapid, short-term magnetic reversal had occurred a mere 41,000 years ago (about the time the <a href="http://www.theguardian.com/science/2013/jun/02/why-did-neanderthals-die-out" target="_blank">Neanderthal disappeared from Europe</a>).</p>
<p>Other evidence of a rapid pole shift was discovered in 1995 in hardened lava in Steens Mountain, Oregon. There, magnetic crystals in the rocks indicated a super-fast magnetic shift had occurred, one in which the poles moved "<a href="http://phys.org/news202971192.html" target="_blank">over 10,000 times faster than normal, at six degrees a day</a>."</p>
<p>At that breakneck rate, a complete magnetic shift could occur in <em>months</em>, rather than thousands of years, so many scientists were understandably skeptical - that is until further evidence of short-term flips was found in 2010 in Battle Mountain, Nevada, where it was revealed that the "<a href="http://phys.org/news202971192.html" target="_blank">magnetic field moved by 53 degrees in a single year.</a>"</p>
<p>Even more recently, in 2012, scientists re-visited the Laschamp event, this time examining sediment cores from the Black Sea as well as other data from the South Pacific and North Atlantic, and their <a href="http://www.sciencedaily.com/releases/2012/10/121016084936.htm" target="_blank">findings were remarkable</a>:</p>
<blockquote>
<p>The field geometry of reversed polarity, with field lines pointing into the opposite direction when compared to today's configuration, last for only about 440 years, and it was associated with a field strength that was only one quarter of today's field. . . . During this period, the field was even weaker, with only 5% of today's field strength. As a consequence, Earth nearly completely lost its protection shield against hard cosmic rays, leading to a significantly increased radiation exposure.</p>
</blockquote>
<p>Although there is no direct evidence of a causal relationship, the Black Sea sediment cores also revealed that two other "<a href="http://www.sciencedaily.com/releases/2012/10/121016084936.htm" target="_blank">extreme scenarios</a>" occurred at about the same time:</p>
<blockquote>
<p>Numerous abrupt climate changes during the last ice age [were happening along with] . . . the largest volcanic eruption on the Northern hemisphere in the past 100,000 years . . . near Naples, Italy . . . [and the] short and fast reversal of the Earth's magnetic field.</p>

What Will Happen When The Earth's Magnetic Field Switches Or Collapses

<p>Fast-casual eatery <a href="https://themelt.com/">The Melt</a>, which is headquartered in the Bay Area, dedicates itself to savory and tech-savvy grilled cheese sandwiches starting at $5 a pop. And cheese aficionados across California are lining up at lunchtime for toasted creations as tame as The Classic (cheddar on artisan white) or as decadent as The Shroom (Swiss, portabello mushrooms, and grilled onions on sourdough).<span style="line-height: 1.5em;"></span></p>

The brainchild of Flip Video founder Jonathan Kaplan</span><span style="line-height: 1.5em;">, Sequoia Capital <span>-</span> the firm that backed Apple, Google, Instagram, and Oracle <span>-</span> <a href="http://gawker.com/5807591/grilled-cheese-sandwich-gets-10-million-in-venture-funding">put up $10 million to get the chain off the ground</a> in 2011. Today, a management team led</span><span style="line-height: 1.5em;"> by Kaplan and</span><span style="line-height: 1.5em;"> a board of directors including three prominent Silicon Valley venture capitalists, a former head of retail operations at Apple, and a James Beard award-winning chef, oversee</span><span style="line-height: 1.5em;"> <a href="https://themelt.com/locations">15 locations throughout California</a>, including several in Silicon Valley.<br /></span></p>
<p><span style="line-height: 1.5em;">We stopped by The Melt's New Montgomery location in San Francisco to find out if it's worth dining out on grilled cheese that costs more than a loaf of white bread and packet of Velveeta combined.</span></p>

<p>The menu board contained<span style="line-height: 1.5em;"> eight grilled cheeses to choose from: four basics ($4.95) and four specialty sandwiches ($6.95). Diners could customize their sandwich with fresh tomato, jalapeno, or grilled onion at no cost; meat and other veggies run $1 - $2 per add-on.</span></p>

<p><span style="line-height: 1.5em;">It's evident that Kaplan's tech background influenced much of the ordering process. My initials popped up on an electronic order status board by the pick-up area, and when my sandwich was ready my initials jumped to the top with the words "Order up!'</span></p>

The cheese needs to be ooey-gooey, the bread has to be crispy "but not hard like a crouton," and the sandwich as a whole should be moist without turning soggy.</p>

I was about to graduate college. I had a journalism degree on the way and a ton of wanderlust, so I figured I'd go to Prague - a cheapish place to get an English teaching certification - and use teaching as a way to support myself while I explored Europe.</span></p><p><span style="line-height: 1.5em;">The economic crisis arrived in the Czech Republic at the same time I did. Recent headlines make it startlingly obvious: when a half-Japanese woman was crowned Miss Universe Japan earlier this year, <a href="http://www.washingtonpost.com/news/morning-mix/wp/2015/05/13/japans-half-black-miss-universe-says-discrimination-gives-her-extra-motivation/" target="_blank">Japanese conservatives flipped out, saying she's not really Japanese</a>. South Korea is going through a population crisis - <a href="http://www.washingtonpost.com/blogs/worldviews/wp/2014/08/30/why-south-korea-predicts-its-end-will-come-in-2750/" target="_blank">partly because nobody wants to marry foreigners</a>. </p><p><span style="line-height: 1.5em;">But it's more than skin deep. <a href="http://www.businessinsider.com/cultural-psychology-of-the-west-and-asia-2015-5">Western thought springs from Ancient Greece and Eastern thought springs from Ancient China.</a>  So the two cultures have totally different takes on the concept of truth. </span><a href="http://www.businessinsider.com/cultural-psychology-of-the-west-and-asia-2015-5">In the West, it's assumed that only one side of a debate can be correct; in the East, it's assumed that right and wrong will be on both sides. </a></p><h2>That having friends from another culture will teach you an insane amount. </h2><p>One of my best friends in Seoul was an advertising guy and a fellow photography nerd Jay. We both had Fridays off, so we'd hop on the subway and get off at some yet-to-be-explored section of Seoul, checking out traditional <em>hanok</em> houses, hopping around art galleries, and eating insanely spicy food. </p><p>From Jay I learned a bit of what it was like to grow up in Seoul - and how to feel at home in a megacity. </p><h2><div class="KonaFilter image-container float_left"><div class="image on-image"><img src="https://static-ssl.businessinsider.com/image/555f90c66bb3f70f0212f379-540-720/168532_581494323976_2178259_n.jpg" border="0" alt="drake santa" width="600" style="float: left;"><p class="source"><span>Jillian Nellwyn Robbins </span></p><p class="caption">As Santa.</p></img></div><p></p></div></h2><h2>That kids are great. </h2><p>When I was in Prague I was teaching adults. In Seoul, I taught students from age 4 to 17. The little ones were super cute and super eager (and only sometimes a terror to keep in line). The teenagers were amazing. I had one group that I would meet on Saturdays; I called it the "critical thinking seminar." We'd pick some issue in the news - from plastic surgery to smartphones - and write about how they shaped life in Korea.</p><p>They dropped some serious insight on me; one student, Teddy, said that "art was the exit of our mind's freedom."</p><p>Never going to forget that.  </p><h2><span style="line-height: 1.5em;">That you can actually move somewhere new and survive. </span></h2><p>Here's the big one: moving quarter-way across the world was super hard. I felt a ton of separation anxiety. I missed my family and friends like hell. After my girlfriend and I broke up (and she took most our mutual friends), I didn't really have any close relationships on the entire continent. </p><p>So I just started talking to people. Getting drinks and dinner with colleagues. Worked on my "relationship with myself," as all the books on meditation I was reading kept encouraging me to do. Journaling. Going on - gasp - dates. By the time I left Seoul, I made friends that I will keep for the rest of my life.
