Exclusive: Meeting a Chef from Asia’s Best Restaurant – Gaggan, Bangkok

Gaggan is Asia’s best restaurant, and among the top 10 restaurants in the world. The restaurant snagged the ‘World’s Best Restaurant’ title five times and is all set to launch an outlet in Mumbai later this year. It’s also widely credited for popularizing molecular gastronomy across the world.

Business Insider met with the 27-year-old Indian Express journalist-turned-Le Cordon Bleu chef Garima Arora who’s going to be heading Gaggan’s Mumbai outlet and is “beyond excited” for the job and being back in her city.

In between giving excited youngsters advice on what course to study to become a chef and listening to their queries, Garima Arora managed to give us some time and demystify what Gaggan is all about and what food means to her.

What’s your favorite dish?
That’s very difficult. It changes. These days it’s Thai.

How can Indians do better as Chefs?
We have to stop aping the top restaurants in the world. We’ve got to stop doing things like everybody else does. We’ve got to figure out a way that works best for us.

It’s all about going back to our roots, and understanding where we come from. That where the answer lies.
